Properly fermented Kimchi has balanced sourness and freshness at the same time.

Probiotics including Lactobacilus, Leu- conostoc, Weisela make vegetables and fruits like Asian cabbage, radish, cucumber, persimmon and perilla leaf fermented in brine with garlic, ginger, onion and other natural preservatives to keep bad microbes away.

Special Kimchi at the moment is Meuse Farm's organic baby radish Kimchi

We met Iming Lin of Meuse Farm during our efforts to support locally grown and sustainable produce - her organically grown baby radishes are packed full of flavour and we are very grateful to have been given the opportunity to make kimchi using the entire radish, from leaf to root.

As this will be the final harvest of this season, we will not be able to make any more delicious organic daikon radish kimchi after this.

These are the same wonderful radishes that were used as the kimchi for our August #FemaleForwardFeast set menu and we hope to give more people the opportunity to have a taste of the wonderful vegetables grown in Cape Town.

30% of the total profits from this batch of kimchi will go directly to Meuse Farm so that they can continue to produce baby radishes for people to discover.
